Crave Bakery Gluten Free Cookbook, published in May 2013, is a collection of 10 years of recipes made in our San Francisco bakery. In fact, Crave was the first gluten-free bakery in San Francisco. Over the years, we developed gluten and dairy-free recipes for celiacs, those with food allergies, gluten sensitivity, autistic children and others who simply appreciate all-natural and alternative ingredients. The result has been gluten free bakery recipes for bakers. Because our recipes were created with production baking in mind, they are fairly efficient and streamlined. As we bakers know, complexity in a formula = money. So, we tried to simplify this process by not only reducing production steps whenever possible but by also keeping our core of necessary ingredients consolidated and modest.   • Sunspire Non-Hydrogenated Peanut Butter Chips (only if you can tolerate soy, dairy and peanuts). Ok, this isn’t exactly a chocolate but it’s a chip! This is the only ingredient in our cookbook that has dairy  because, at the time of publishing, you can’t find all-natural, gluten-free and dairy-free peanut butter chips. So, if you can tolerate peanuts and you can tolerate dairy, you will be able to make sinful combinations of peanut butter and chocolate desserts with this product.

  • Palm Shortening is a non-hydrogenated and cholesterol-free oil that is solid at room temperature. It works just like butter in recipes. We like Spectrum because they are a responsible grower.

  • High Heat Canola Spray is great for baking. It won’t burn and it has a very mild flavor. Spectrum makes our favorite.

  • Powdered Sugar very often has cornstarch in it. We recommend Wholesome Sweetener Organic Powdered Sugar. You must read the label because some of their powdered sugar contains tapioca flour and some contains cornstarch.

Crave Bakery’s Recommended Gluten Free, Dairy Free Milk Alternatives

Following is a list of our recommended gluten free, dairy free milk alternatives from the recipes in our 10th Anniversary Crave Bakery Gluten Free Cookbook. We have chosen our favorite, high quality brands because these manufacturers have clearly stated Gluten-Free in their product descriptions or company info.* Hopefully, this list saves you a little work!

Soy Milk or Rice Milk (or your non-dairy preference) are used in our cookbook. Try the Original/ Enriched style for maximum creaminess. (Note that we’ve found Enriched versions may contain corn.) Even though Vanilla probably tastes better on your cereal, it will change the taste of the recipe, so use Original flavor instead. Our recipes work best with their recommended non-dairy option. However, you can try substituting any other dairy-free milk you prefer. Below are a few options that we like:
