Crave Bakery’s Recommended Gluten Free, Dairy Free Milk Alternatives

Following is a list of our recommended gluten free, dairy free milk alternatives from the recipes in our 10th Anniversary Crave Bakery Gluten Free Cookbook. We have chosen our favorite, high quality brands because these manufacturers have clearly stated Gluten-Free in their product descriptions or company info.* Hopefully, this list saves you a little work!

Soy Milk or Rice Milk (or your non-dairy preference) are used in our cookbook. Try the Original/ Enriched style for maximum creaminess. (Note that we’ve found Enriched versions may contain corn.) Even though Vanilla probably tastes better on your cereal, it will change the taste of the recipe, so use Original flavor instead. Our recipes work best with their recommended non-dairy option. However, you can try substituting any other dairy-free milk you prefer. Below are a few options that we like:

Crave Bakery’s Recommended Gluten Free Decorating Ingredients

Below are our recommended gluten-free/dairy-free decorating ingredients from the recipes in our 10th Anniversary Crave Bakery Gluten Free Cookbook. We have chosen our favorite, high quality brands because these manufacturers have clearly stated Gluten-Free in their product descriptions or company info.* Hopefully, this list saves you a little work in choosing your ingredients!

In general, we recommend using all-natural food coloring, but be aware that natural colors will always be more pale in comparison to conventional food coloring. You won’t get those same vibrant colors but you can still make some really pretty pastels.

  • For more experienced decorators who want to use Fondant, Vanilla Satin Ice is our favorite. It’s gluten-free, dairy-free and nut-free.

Below are our recommended gluten-free/dairy-free preserves from the recipes in our 10th Anniversary Crave Bakery Gluten Free Cookbook. We have chosen our favorite, high quality brand because Bonne Maman has clearly stated Gluten-Free in their company info.* Hopefully, this list saves you a little work in choosing your ingredients!

In addition to being gluten-free, these preserves are also corn-free, nut-free and all-natural. They can be used in our gluten-free Cake Filling recipes or in our gluten-free Frangipane Tart recipes.

Crave Bakery Recommends Hains Featherweight Baking Powder

  • Xanthan Gum helps to replace gluten’s stickiness. If you have a corn allergy, make sure your xanthan gum is corn-free such as the one from Bob’s Red Mill.

Crave Bakery Recommends Bobs Red Mill Xanthan Gum

  • We prefer Sea Salt for its purity. If you are using salt in frosting, it’s best to use a fine-grained version such as Selina Naturally Fine Ground Celtic to make sure you get a nice, smooth finish.

Crave Bakery cupcakes

The book boasts 60 recipes created specifically for Crave Bakery, San Francisco’s first gluten-free bakery. The bakery has been open for 10 years, and Cameo candidly relates the very beginnings of her business, as well as her own journey of discovery of Celiac Disease. I’m extremely proud of having been selected to do this review!  As well as excited for Cameo’s sweet (and gluten free) successes. (Cameo – my favorite part is when you talk about having cojones! Indeed!)

Gluten Free Baking Tip of the Day – Scaling up your Salt

Daily tips for your gluten free baking adventure!

Today’s Tip:

  • Be careful with the salt when scaling up. If you’re not sure about keeping the salt proportional in a larger recipe, be conservative. You can always taste the batter and add a little bit more but you can’t remove it if it’s already too salty.

As much as I like to try new things: I must admit that when it comes to my food I am a creature of habit. This holds especially true now that I deal with a number of food intolerances and even more so when it comes to my desserts. I have never been much of a cake person but when I do have a Craving simple, classic, and delicious work best. I developed Awesome gluten and dairy free Carrot Cake and Chocolate Cake recipes and a White Cake was on my ever expanding list of classic cakes to “glutenfreeify”(yes, I made up a word). So, it comes as no surprise that when it came time to select a recipe to bake and shoot after reading and reviewing Cameo Edward’s Gluten Free cookbook her Vanilla Cake was my first choice.
